Ingredients
 

  • 1 cup Cashews
  • 10 Medjool dates (pitted)
  • ½ tsp Pure vanilla extract
  • ¼ cup Coconut (shredded)
  • ¼ tsp Sea salt

Instructions
 

  • Add to Processor – add the cashews and give it a few quick pulses to crush them into small pieces.
  • Combine – the pitted dates, ¼ cup shredded coconut, ½ teaspoon vanilla extract, and salt in a food processor.
  • Blend – Process until the mixture becomes sticky and holds together when pressed. Scrape down the sides as needed.
  • Form Balls – Scoop out portions (about 1 tablespoon each) and roll into bite-sized balls.
  • Coat (Optional) – Roll in extra shredded coconut for a finishing touch.
