Ingredients
- 1 cup Cashews
- 10 Medjool dates (pitted)
- ½ tsp Pure vanilla extract
- ¼ cup Coconut (shredded)
- ¼ tsp Sea salt
Instructions
- Add to Processor – add the cashews and give it a few quick pulses to crush them into small pieces.
- Combine – the pitted dates, ¼ cup shredded coconut, ½ teaspoon vanilla extract, and salt in a food processor.
- Blend – Process until the mixture becomes sticky and holds together when pressed. Scrape down the sides as needed.
- Form Balls – Scoop out portions (about 1 tablespoon each) and roll into bite-sized balls.
- Coat (Optional) – Roll in extra shredded coconut for a finishing touch.
- Chill & Store – Refrigerate for at least 15 minutes to firm up. Store in an airtight container for up to a week.
