Ingredients
 

  • 1 cup Cashews
  • 10 Medjool dates (pitted)
  • ½ tsp Pure vanilla extract
  • ¼ cup Coconut (shredded)
  • ¼ tsp Sea salt

Instructions
 

  • Add to Processor - add the cashews and give it a few quick pulses to crush them into small pieces.
  • Combine - the pitted dates, ¼ cup shredded coconut, ½ teaspoon vanilla extract, and salt in a food processor.
  • Blend - Process until the mixture becomes sticky and holds together when pressed. Scrape down the sides as needed.
  • Form Balls - Scoop out portions (about 1 tablespoon each) and roll into bite-sized balls.
  • Coat (Optional) - Roll in extra shredded coconut for a finishing touch.
  • Chill & Store - Refrigerate for at least 15 minutes to firm up. Store in an airtight container for up to a week.
