Operator Banana Bread Muffins
Ingredients
- 1 ¾ cup (192 grams) oat flour
- ½ cup (35 grams) protein powder
- ⅓ cup (55 grams) shredded coconut, sweetened
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp cinnamon
- 1 cup (265 grams) mashed ripe bananas (2-3 bananas)
- 1 tsp pure vanilla extract
- ½ cup greek yogurt
- 1 egg
- ¼ cup (60 grams) egg whites (or two egg whites)
- ⅓ cup chopped walnuts
- ⅓ cup chocolate chips
Instructions
- Preheat & Prep – Preheat your oven to 350°F (175°C). Line a muffin tin with liners or lightly grease with oil.
- Mix Wet Ingredients – In a large bowl, mash the bananas, then whisk in eggs, egg whites, Greek yogurt, and vanilla extract until well combined.
- Combine Dry Ingredients – In a separate bowl, mix protein powder, oat flour, baking powder, shredded coconut, baking soda, cinnamon, and salt.
