  • 1 ¾ cup (192 grams) oat flour
  • ½ cup (35 grams) protein powder
  • cup (55 grams) shredded coconut, sweetened
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • 1 cup (265 grams) mashed ripe bananas (2-3 bananas)
  • 1 tsp pure vanilla extract
  • ½ cup greek yogurt
  • 1 egg
  • ¼ cup (60 grams) egg whites (or two egg whites)

  • cup chocolate chips

Instructions
 

  • Preheat & Prep – Preheat your oven to 350°F (175°C). Line a muffin tin with liners or lightly grease with oil.
  • Mix Wet Ingredients – In a large bowl, mash the bananas, then whisk in eggs, egg whites, Greek yogurt, and vanilla extract until well combined.
  • Combine Dry Ingredients – In a separate bowl, mix protein powder, oat flour, baking powder, shredded coconut, baking soda, cinnamon, and salt.
  • Blend Together – Gradually fold the dry ingredients into the wet mixture, stirring until fully combined. Along with the walnuts and chocolate chips.
  • Fill the Muffin Tin – Divide the batter evenly into the prepared muffin tin, filling each about ¾ full.
