Preheat & Prep – Preheat your oven to 350°F (175°C) . Line a muffin tin with liners or lightly grease with oil.
Mix Wet Ingredients – In a large bowl, mash the bananas, then whisk in eggs, egg whites, Greek yogurt, and vanilla extract until well combined.
Combine Dry Ingredients – In a separate bowl, mix protein powder, oat flour, baking powder, shredded coconut, baking soda, cinnamon, and salt.
