Ingredients
 

  • 1 cup raw almonds
  • 10 medjool dates (pitted)
  • 2 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • ¼ cup shredded unsweetened coconut
  • ¼ teaspoon salt

For rolling:

  • ½ cup shredded unsweetened coconut

Instructions
 

  • Process the almonds – Pulse in a food processor until finely ground.
  • Deploy the dates – Add pitted dates and blend until a sticky mixture forms.
  • Add remaining ingredients – Toss in shredded coconut, lemon juice, zest, vanilla, and salt. Process until fully combined.
  • Form the energy balls – Scoop out small portions and roll into bite-sized balls. Roll each ball into a bowl of coconut flakes until the outside is fully coated.
  • Final adjustments – If too dry, add a splash of water. If too sticky, add more shredded coconut.
